When I published my book, the link for "Edit" remained with the tags. How do I remove that so that others don't edit my book?

The Edit link only shows up on books you can edit. Others don't see it, just like you don't see it on others books. So, your books will show an Edit link but no worries about others (except site editors) modifying it.
